As Stallman says, Cloud Computing is a too broad, too changing concept to talk about it. Cloud Computing is being invented NOW, Amazon was the first known brand of what we now call IaaS, they called it elastyc computing on the first place.
As you figured out by yourself, everyone stills inventing IaaS at the moment, there are groups of people working on interoperability and definitions, there are companies developing new Cloud Software, some are new stacks, some are new hypervisors. Even the topology is not exactly the same on every solution, and some are keeping it secret while others go open source.
These are the 5 common elements of almost every IaaS cloud...

Intel 48-core and TILE-Gx Cloud processor.
Intel Labs has created an experimental “Single-chip Cloud Computer,” (SCC) a research microprocessor containing 48 cores. It incorporates technologies intended to scale multi-core processors to 100 cores and beyond, such as an on-chip network, advanced power management technologies and support for “message-passing.”
Architecturally, the chip resembles a cloud of computers integrated into silicon. The novel many-core architecture includes innovations for scalability in terms of energy-efficiency including improved core-core communication and techniques that enable software to dynamically configure voltage and frequency to attain power consumptions from 125W to as low as 25W.

My 1,5 cents on Amazon EC2 vs Rackspace Cloud Servers.
There was a time when there was only one (known) IaaS provider, but competition has arrived, targeting different people with different needs...
Indeed Amazon has a lot more features, but it happens to be that I need none of it, like probably any small-medium business needs. And that seems to be the target of Cloud Servers.
I've been hosting my personal and company demo sites on both IaaS providers and doing some (un-professional) performance tests with installs of ubuntu at both platforms too...
